Baking Carrot Muffins with Chocolate Chips

Muffins are small cakes that are baked in a specially made baking pan. I have already presented you a variety of different recipes on this blog, e.g. a recipe for banana muffins or here a recipe for applesauce muffins.

In today’s post I’ll show you how quick and easy it is to bake delicious muffins with carrots and chocolate chips. The carrots are roughly grated with a grater and then mixed into the dough. Have fun baking!

Ingredients for 12 Chocolate Chip Carrot Muffins:

  • 3 carrots
  • 200 grams flour
  • 150 grams chocolate chips
  • 100 grams butter
  • 75 grams sugar
  • 75 milliliters milk
  • 2 large eggs
  • 1 sachet vanilla sugar
  • 1 heaping teaspoon baking powder
  • A pinch of salt

Required kitchen gadgets, helper & preparations:

  • Grater for carrots
  • Mixing bowl
  • Kitchen machine or mixer
  • Muffin pan
  • Paper liners
  • Whisk
  • Cooling rack

Preheat the oven to 200°C (top/bottom heat). Line a muffin pan with paper liner. Melt 100 grams butter in the microwave or on the stove. Mix flour with 1 heaping teaspoon baking powder in a small bowl & set aside until further use. Peel off 3 carrots & coarsely grate with a grater.

In a mixing bowl combine 2 eggs, 75 grams sugar, 1 sachet vanilla sugar & a pinch of salt, then mix together with a mixer or kitchen machine for about 2 – 3 minutes until beautifully fluffy. If that’s done add flour mixture, melted butter & 75 milliliters milk & briefly mix together with a whisk until a smooth batter.




Finally fold in shredded carrots & half to two thirds of the chocolate chips & fill the batter into the prepared muffin tin with the help of 2 tablespoons. Then decorate the muffins with the remaining chocolate drops & bake in a preheated oven at 200°C (top/bottom heat) for approx. 25 – 30 minutes until golden brown.

Take the finished muffins out of the oven, let them cool down on a grid & then serve them lukewarm. Have fun baking!
