I love cake more than anything, one of my favorites is and remains apple pie. I can eat apple pie all year round without getting tired of it 🙂

In today’s post I’ll show you a quick recipe for a delicious apple pie with sponge cake batter. The ingredients for this are simply “mixed together” quickly, spread apple slices on top & the tray goes straight into the oven. Happy baking!

Ingredients for a sheet apple sponge cake:

…for sponge cake batter:

  • 500 grams flour
  • 5 eggs
  • 250 grams melted butter
  • 150 milliliters milk
  • 150 grams sugar
  • 1 sachet vanilla sugar
  • 2 teaspoons baking powder
  • A pinch of salt

…more ingredients:

  • 5 – 6 apples
  • Whipped cream, custard or vanilla ice cream to serve

Required kitchen gadgets, helper & preparations:

  • Mixing bowl
  • Mixer
  • Baking sheet + baking paper
  • Baking frame
  • Bowl for flour mixture
  • Knife to cut apples

Instructions:

Preheat the oven to 200 °C (top/bottom heat). Line a baking tray with parchment paper, possibly also place a baking frame on the baking tray. Mix 500 grams of flour with 2 teaspoons of baking powder and set aside. Melt butter on the stove or in the microwave. Core the apples, peel if necessary & then cut into pieces, wedges or slices with a knife.

Next, beat 5 eggs, 250 grams melted butter, 150 grams sugar, 150 milliliters milk & a pinch of salt with a mixer for 2 – 3 minutes until fluffy. Then add the prepared flour and baking powder mixture, mix in briefly with a mixer & then transfer the batter on the prepared baking sheet & smooth out evenly.

Top the batter with the prepared apple pieces & then place the tray in the preheated oven for 30 – 45 minutes until the surface has turned golden brown & the cake is completely baked, it is best to test with a chopstick.

Take the finished apple pie out of the oven, allow to cool down a bit & then cut into pieces & best serve while still warm. Have fun baking!

Tip: The best way to serve the apple pie is with whipped cream, vanilla sauce or vanilla ice cream. Alternatively, just sprinkle some powdered sugar over it.
