Instructions:
…for One Pot Rice with Shrimps, Tomatoes & Peas:
Peel the soup vegetables (here consisting of 2 carrots, a small leek & a small piece of celery) & cut into fine cubes or the leek into fine rings. Peel and finely chop the onion & garlic. Heat a large pan with a good dash of oil, add the vegetables to the pan & sauté for 4 – 5 minutes over medium-high heat, turning/stirring occasionally.
Next, add a heaping tablespoon of tomato paste, stir in & allow to roast briefly. Then deglaze everything with 100 milliliters of white wine & allow the wine to boil down almost completely while stirring. When that’s done, add 250 grams of basmati rice, 2 heaped teaspoons of oregano & 1 heaped teaspoon of salt, and also pour in 750 milliliters of water.
Then stir everything well, bring the contents of the pan to the boil & simmer gently over low to medium heat with the lid closed for about 12 minutes until the rice is cooked and the liquid has almost completely been absorbed. Stir the rice pan from time to time so that nothing can burn on the bottom of the pan.
By the way, prepare 400 grams of shrimps (uncooked & deveined), also halve or quarter around 400 grams of small tomatoes depending on their size & take 200 grams of peas out of the freezer & allow them to thaw.
As soon as the rice is cooked, add the shrimps, tomatoes & peas and season everything again with a good pinch of salt & pepper. Stir the shrimps, tomatoes & peas into the rice & allow everything to cook in the hot pan for a few minutes with the lid closed over low heat.
Then remove the rice pan from the heat, spread on deep plates & serve garnished with chopped parsley, if desired. Have fun cooking!
