In today’s post I’ll show you a quick & easy sandwich recipe with a classic Italian touch, namely we cook a chicken “caprese” sandwich with basil pesto, chicken breast, tomatoes & mozzarella.
The chicken breast fillets are fried in the pan & then gratinated in the oven with tomatoes & mozzarella cheese, served with a quick basil pesto sauce. Absolutely Delicious! Have fun cooking!

Caprese Chicken Sandwiches with Basil Pesto Sauce
Ingredients for 4 servings:
…for the basil pesto:
- 1 pot of fresh basil
- 100 milliliters olive oil
- 50 grams Parmesan cheese
- 50 grams pine nuts (alternatively almonds)
- 1 clove of garlic
- Salt & pepper
…more ingredients:
- 4 bread rolls
- 4 small chicken breast fillets
- 2 tomatoes
- 125 grams mozzarella cheese
- Salt & pepper
- Oil & Butter for frying
Required kitchen gadgets, helper & preparations:
- Small pan for pine nuts
- Tall container to puree
- Blender
- Grater
- Frying pan for chicken & bread rolls
- Baking sheet + parchment paper
Instructions:
…for Chicken “Caprese” Sandwiches:
Coarsely grate the parmesan with a grater. Pluck the basil leaves from the stems. Peel the garlic and roughly chop into small pieces. Roast the pine nuts in a pan without adding any oil or fat over medium heat for 2 – 3 minutes until golden brown, stirring or tossing occasionally so that the pine nuts don’t get too dark.

Place all the ingredients for the basil pesto (basil leaves, grated parmesan, toasted pine nuts, garlic & olive oil) in a tall container. Then process everything briefly with a blender to a creamy pesto sauce. Season with salt & pepper to taste & set aside until ready to serve.
Preheat the oven in good time to 240°C – 250°C with the grill function switched on. Line a baking sheet with parchment paper. Cut tomatoes & mozzarella into thin slices. Heat a large pan with a dash of oil & fry the chicken breast fillets over medium to high heat for 3 – 4 minutes per side, season with salt & pepper.

Then lift the chicken breast fillets out of the pan & place on the prepared baking sheet. Cover each chicken fillet with a couple of tomato slices and mozzarella cheese on top & then put the baking sheet as high as possible in the preheated oven to gratinate until the cheese has melted & has taken on a nice golden brown colour.

Meanwhile, cut the bread rolls in half with a knife. Put the chicken pan back on the stove, add a good piece of butter & toast the bun halves in the pan for a few minutes on the cutting side until golden brown, then lift out of the pan & set aside until ready to serve.
Take the gratinated chicken breast fillets out of the oven & then serve as a sandwich together with the basil pesto sauce and the toasted bread rolls. Have fun cooking! Bon appetit!
