In today’s post I’ll show you a super simple & delicious recipe for a quick salad with fried gnocchi, tomatoes & mozzarella. The ideal salad for the currently rising temperatures outside, nobody has to stand in the kitchen for long & of course the oven stays off.
The salad is served lukewarm & tastes best that way, right after the gnocchi have been fried, mix everything in a bowl & serve immediately. Have fun cooking!

Ingredients for 1 bowl full of salad:
- 600 grams of gnocchi (from the refrigerated section)
- 5 large tomatoes
- 250 grams of mozzarella mini balls
- 2 – 3 hands basil leaves
- Balsamic vinegar
- Olive oil
- 1 tablespoon butter for frying
- Salt & pepper
Required kitchen gadgets, helper & preparations:
- Large pan for gnocchi
- Large bowl for salad
Instructions:

Heat a large pan with a tablespoon of butter & fry the gnocchi for 6 – 7 minutes over medium heat until golden brown on all sides, turning or tossing occasionally. Then first cut the tomatoes into finger-thick slices and afterwards into small pieces. Put the tomatoes together with the mozzarella mini balls in a large salad bowl & season generously with salt & pepper.
Pluck the basil leaves from the stems & add them whole to the salad bowl (alternatively, the basil can also be chopped). Add a good dash of olive oil as well as balsamic vinegar & stir everything well so that all the ingredients can be evenly distributed. Finally, briefly fold the roasted gnocchi into the salad and serve immediately & lukewarm. Have fun cooking!
