Muffins are small cakes that are baked in a specially made baking pan. There are countless different muffin variations & recipes, for example I have already shown you blueberry muffins or applesauce muffins with crumbles.
In today’s post I’ll show you how you can quickly and easily bake delicious lemon yoghurt muffins with lemon icing. Have fun baking!

Ingredients for 12 Lemon Yogurt Muffins:
- 250 grams flour
- 200 grams yogurt (3,5% fat)
- 150 grams butter
- 100 grams sugar
- 3 eggs
- 125 grams powdered sugar
- 1 – 2 organic lemons
- 1 sachet vanilla sugar
- 1 heaping teaspoon baking powder
- A pinch of salt
Required kitchen gadgets, helper & preparations:
- Bowl for flour mixture
- Mixing bowl
- Kitchen machine or mixer
- Muffin pan
- Paper liner
- Grater
- Small bowl for icing
- Lemon juicer
- Spatula
- Wire rack
Instructions:
…for lemon yogurt muffins:
Preheat the oven to 200°C (top/bottom heat) or 180°C (convection). Line a muffin pan with paper liner. Melt 150 grams butter in the microwave or on the stove. Mix flour with a heaping teaspoon baking powder & a pinch of salt in a small bowl & set aside until further use.
In a mixing bowl combine 3 eggs, 100 grams sugar, 1 sachet vanilla sugar & the zests of an untreated organoc lemon, then mix together with a mixer or kitchen machine for about 1 – 2 minutes until fluffy. Finally add flour mixture, 200 grams yogurt & the melted butter to the mixing bowl & briefly mix everything until you got a smooth batter.
Using 2 tablespoons or an ice cream scoop to scoop the batter into the prepared muffin pan. Then put the muffins in the preheated oven & bake at 200°C (top/bottom heat) or 180°C (convection) for approx. 20 – 25 minutes until golden brown.
Meanwhile, squeeze a lemon, put 125 grams of icing sugar in a small bowl & gradually mix with the lemon juice until you get a viscous icing, then set the icing aside until further use.
Take the finished muffins out of the oven, let them cool on a wire rack & then turn them upside down in the icing & decorate with them. Finally, rub some lemon zest over it again & serve the muffins afterwards. Have fun baking.
