In today’s post I’ll show you a quick & easy recipe for a delicious couscous pan with lots of tomatoes, peppers & garnished with feta cheese, all orientally seasoned with cumin, coriander & paprika powder.

This couscous pan is a really delicious vegetarian recipe in which I and my family didn’t miss any meat, but you could definitely serve the couscous as a side dish with a roasted piece of meat as well. Have fun cooking!

Ingredients for 4 servings:

  • 1,25 kilograms tomatoes
  • 4 pointed peppers
  • 1 large onion
  • 2 – 3 cloves galic
  • 200 milliliters veggie stock or broth
  • 150 grams instant couscous
  • 1 heaping tablespoon ajvar (spicy/hot)
  • 1 teaspoon sweet paprika powder
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • Salt, pepper & sugar
  • Oil for frying
  • Fresh coriander for garnish
  • Feta cheese for serving

Required kitchen gadgets, helper & preparations:

  • Large pan or wok

Instructions:

Wash, deseed and cut the peppers into small pieces. Peel the onion and garlic and chop roughly. Roughly chop tomatoes into pieces. Next, heat a large pan with a good splash of oil, add the onions, garlic and peppers to the pan and sauté for 3 – 4 minutes over medium heat, turning occasionally, until translucent.

Then add 1 heaped tablespoon of ajvar and a teaspoon each of cumin, paprika (sweet) and coriander, stir in and allow to roast for a few seconds. Next add the tomatoes, season everything generously with salt and pepper and simmer over medium heat for 8 – 10 minutes, stirring occasionally.

Finally, add 150 grams of couscous and 200 milliliters of vegetable stock to the pan and let the couscous swell for a few minutes, stirring occasionally, until all the liquid has been absorbed. Before serving, season everything with salt, pepper and sugar to taste, then spread on plates and serve garnished with crumbled feta and chopped coriander. Have fun cooking!
