In today’s post I’ll show you a quick & easy recipe for super delicious ground beef bread rolls with feta cheese, vegetables & a range of oriental spices.

For the oriental ground beef snails I used sumac, thyme, cumin & “pul biber”, but in principle you can also use other spices & herbs, just what you have at home or what you like best. Have fun baking!

Oriental Ground Beef Bread Rolls with Feta Cheese

Ingredients for about 20 ground beef bread rolls:

…for dough:

  • 500 grams flour
  • 300 milliliters water
  • About 20 grams fresh yeast
  • A teaspoon each of salt & sugar

…for filling:

  • 400 grams ground beef
  • A red bell pepper, tomato & onion
  • 1 – 2 cloves garlic
  • 2 heaping tablespoons spicy (or mild) ajvar
  • A teaspoon each of sumac, cumin thyme & “pul biber”
  • 100 grams feta cheese for sprinkling
  • Black sesame seeds for sprinkling
  • Salt & pepper
  • Parsley for garnish

Required kitchen gadgets, helper & preparations:

  • Mixing bowl for ground beef mixture
  • Mixing bowl for dough
  • Kitchen machine or mixer with dough hooks
  • Kitchen towel
  • Rolling pin
  • 2 Baking sheets + baking paper

Instructions:

Finely dice the tomato. Also cut the peppers into fine cubes. Peel and finely chop the onion and garlic. Put the prepared vegetables together with 400 grams of ground beef in a mixing bowl & season with 1 teaspoon each of salt, cumin, sumac, thyme & “pul biber”. Also add a good pinch of pepper and 2 heaping tablespoons of hot/spicy (or mild) ajvar. Then mix everything together well until all the ingredients are evenly spread & set aside for a moment.

Info: “Pul Biber” is the term for dried mild or hot peppers, widely used in Turkish cuisine. Ajvar is the name of a spicy paprika eggplant preparation with the flavors mild to hot.

For the yeast dough, crumble ½ cube of yeast in a mixing bowl, pour in 300 milliliters of lukewarm water, also add 500 grams of wheat flour & 1 teaspoon each of salt as well as sugar. Then knead everything with a food processor or a mixer with dough hook for 4 – 5 minutes to a smooth dough.

Place the finished dough on a floured work surface & roll out with a rolling pin to about 50cm x 40cm in size, making sure that the dough does not stick too much to the worktop.

Spread the rolled out dough evenly with the mincemeat & then roll up tightly from the long side. Cut the rolled-up dough into pieces or snails about 2 centimeters wide & place them on two baking trays lined with baking paper leaving a little space between them.

Cover the snails with a kitchen towel & let them rest for about 30 minutes until the dough volume has increased a little. Preheat the oven to 200°C (convection) in good time. Sprinkle the ground beef buns with some crumbled feta cheese before baking, and if you like, sprinkle also with some black cumin & then place in the preheated oven for 18 – 20 minutes.

Take the finished beef snails out of the oven, let them cool down a bit & serve garnished with chopped parsley. Happy baking!
