Classic beef roulades filled with bacon, onions and pickles are a real classic & traditional German dish at Christmas time, I presented the recipe to you here on my blog a few years ago.

In this article I’ll show you a quick version for this beef roulades by cooking a beef roulades ragout. The roulades are cut into strips, then mixed with all the ingredients that you normaly use for a classic roulade and then cooked together in a pan. The preparation time is roughly halved and there is no need to roll the roulades either. Have fun cooking!

Ingredients for 2 – 3 servings:

  • 750 grams beef roulades
  • 750 milliliters beef or veggie stock/broth
  • 200 milliliters cream
  • 200 milliliters red wine
  • 100 grams bacon bits
  • 3 – 4 gherkins
  • 1 large onion
  • 1 clove garlic
  • 1 heaping tablespoon tomato paste
  • 1 heaping tablespoon mustard
  • 1 heaping teaspoon cornstarch
  • A teaspoon each of dried rosemary & thyme
  • 4 – 5 each of allspice seeds, cloves and juniper berries
  • 1 – 2 bay leaves
  • Salz & Pfeffer
  • Öl zum Anbraten

Required kitchen gadgets, helper & preparations:

  • Large pan or pot with lid for ragout
  • Tea or spice bag (+ possibly stapler for sealing)

Instructions:

Cut the beef roulades into strips. Peel the onion and also cut it into strips. Peel the garlic and chop roughly. Fill a tea bag a spice bag with 1 – 2 bay leaves, 4 – 5 pieces each of cloves, allspice seeds & juniper berries as well as 1 teaspoon each of rosemary & thyme and close tightly (if necessary with a stapler).

Heat a large pan or pot with a good splash of oil, add the beef to the pan and fry over medium to high heat for 4 – 5 minutes, turning occasionally, season with salt and pepper and then remove from the pan. Next add 100 grams of bacon bits, the prepared onions and garlic and fry for another 2 – 3 minutes over medium heat, turning occasionally.

Next, add 1 heaped tablespoon each of tomato paste and mustard to the pan, let it roast briefly and then deglaze with 200 milliliters of red wine. Allow the red wine to boil down almost completely while stirring, then put the beef strips back in the pan, add the prepared spice bag and fill up everything with around 800 milliliters of beef or vegetable stock/broth.

Bring the contents of the pan to the boil and simmer gently with the lid closed over a low heat for about 45 minutes until the meat is tender, stirring occasionally. Meanwhile, cut 3 – 4 gherkins into slices & mix together 200 milliliters of cold cream and 1 heaped teaspoon of cornstarch and set aside.

After about 45 minutes of cooking, add the gherkins and the prepared cream mixture to the pan and let everything simmer until the beef roulades ragout has reached a creamy consistency. Finally, season with salt and pepper to taste and serve along with rice, pasta, potatoes or spaetzle. Enjoy your meal and have fun cooking! Merry Christmas!
