In today’s post, I’ll show you a simple recipe for a delicious pasta salad with ground beef, corn & black beans, the ideal salad for any party, barbecue or as a main meal.

I used fusilli for this pasta salad, but other types of pasta such as penne or spaghetti are also suitable for this recipe. Have fun cooking!

Tex Mex Pasta Salad with Ground Beef, Corn & Black Beans

Ingredients for 1 large bowl full of salad:

  • 400 grams pasta (“fusilli” or small macaroni for example)
  • 500 grams ground meat (half beef & half pork)
  • 3 – 4 tomatoes
  • 1 bunch spring onions
  • 1 – 2 limes
  • 1 – 2 cloves garlic
  • 1 small can black beans (drained)
  • 1 small can corn (drained)
  • 1 teaspoon each of cumin, ground coriander, oregano & sweet paprika
  • A small bunch fresh cilantro or parsley
  • Olive oil
  • Sour cream for serving
  • Salt, sugar & pepper

Required kitchen gadgets, helper & preparations:

  • Large pot for pasta
  • Pan for ground meat
  • Pasta strainer
  • Press for the lime(s)
  • Large bowl for salad

Instructions:

Bring a large pot of salted water to the boil and cook the pasta for 7 – 8 minutes or according to the package instructions until al dente, then drain in a pasta sieve and rinse with cold water. Meanwhile heat up a pan with a dash of oil, fry the ground beef for 6 – 7 minutes until crumbly, season with salt and pepper and 1 teaspoon each of cumin, oregano, ground coriander and paprika (sweet).

Cut tomatoes into small cubes. Cut spring onions into fine rolls. Peel the garlic and chop finely. Squeeze the lime(s) with a press. Add the tomatoes, spring onions and garlic to a large salad bowl along with lime juice, a good splash of olive oil and a good pinch of salt, sugar and pepper. Add the corn, black beans, minced meat and pasta and stir everything together well and season with salt and pepper to taste.

Finally, finely chop a small bunch of coriander (alternatively parsley) and add it to the salad shortly before serving. Spread the Tex Mex salad with ground meat, corn and beans on deep plates and serve. A dollop of sour cream goes well with it. Have fun cooking!
