Today I’m going to show you another quick and easy recipe for a super delicious one pot pasta, this time vegetarian with leaf spinach, dried tomatoes, pine nuts and feta or shepherd’s cheese. The One Pot Pasta is made super quickly and is on the table within 25 minutes, including all the preparations.

I chose fusilli for this one pot pasta, but as always, all other types of pasta (e.g. penne or spaghetti) are also suitable for this recipe. Have fun cooking!

Ingredients for 4 servings:

  • 500 grams fusilli pasta (or any other pasta shape of your choice)
  • 1 liter water
  • 300 grams frozen spinach
  • 150 grams dried tomatoes
  • 150 grams feta cheese
  • 100 milliliters cream
  • 50 grams pine nuts
  • 1 large onions
  • 2 – 3 cloves garlic
  • Some zest from an untreated lemon
  • Salt & pepper
  • Oil for frying

Required kitchen gadgets, helper & preparations:

  • Large pan or pot with lid
  • Fine grater for lemon

Instructions:

Peel the onion and garlic and chop finely. Cut dried tomatoes into strips. Roast the pine nuts in a pan over a low to medium heat without adding oil or fat, then remove them from the pan and set aside. Place the pan back on the stove, heat up with a splash of oil, add the onions and garlic to the pan and sweat for 2 – 3 minutes over medium heat, turning occasionally, until translucent.

Then add 500 grams of fusilli (alternatively another type of pasta), 300 grams of frozen leaf spinach, the dried tomatoes, 1 liter of water and 2 teaspoons of salt to the pan, then stir everything well, bring to the boil and allow to simmer gently with the lid closed over a low to medium heat for 10 – 12 minutes.

Stir the one pot pasta from time to time so that all the ingredients can be distributed evenly and nothing can burn on the bottom of the pan. As soon as the pasta is cooked and the liquid has almost completely absorbed, add the roasted pine nuts and 100 milliliters of cream, also crumble the feta cheese and add it to the pan as well.

Stir the one pot pasta well and let the feta cheese melt in the hot pan. Finally, season everything with possibly more salt, freshly ground pepper and a little zest from an untreated lemon. Then stir well one last time & warm through briefly, remove the pan from the heat & spread the one pot pasta on deep plates & best serve immediately. Have fun cooking!
