In today’s post, I’ll show you a quick and easy recipe for spaghetti with shrimps & bell peppers with a light & summery tomato sauce.

The spaghetti are cooked quickly and the sauce also only takes about 15 minutes to prepare. The perfect lunch or dinner when you’re in a hurry. Have fun cooking!

Ingredients for 4 servings:

  • 300 – 400 grams spaghetti pasta
  • 250 grams shrimps (peeled & deveined)
  • 2 large bell peppers (red & yellow)
  • 1 onion
  • 1 – 2 cloves garlic
  • 1 can chopped tomatoes
  • 1 teaspoon oregano
  • ½ teaspoon smoked paprika powder
  • Oil for frying
  • Salt, sugar & pepper
  • Basil for garnish

Required kitchen gadgets, helper & preparations:

  • Pot or saucepan for sauce
  • Large pot for pasta
  • Pasta strainer
  • Plate for shrimps

Wash the peppers, deseed & cut into thin strips or pieces. Peel the onion & cut into fine strips. Peel & chop the garlic. Then heat a large pan with a dash of oil, add the shrimps to the pan & sear for 1 – 2 minutes over medium to high heat, season with salt & pepper. Lift the shrimps out of the pan and set aside.

When that’s done, add another dash of oil to the pan & sweat peppers, onions & garlic over medium heat while turning occasionally for 3 – 4 minutes until translucent, season with salt & pepper to taste.

Afterwards season with 1 teaspoon oregano as well as ½ teaspoon smoked paprika powder, also stir in 1 can chopped tomatoes & allow to simmer the paprika tomato sauce over low to medium heat for a few minutes until the pasta is cooked.

Meanwhile, bring a large pot of salted water to the boil & cook the pasta in it for 7 – 8 minutes or according to the instructions on the package until al dente, then drain in a colander.

Finally, put the shrimps back into the pan and season the sauce well with salt, sugar & pepper. Then mix the drained spaghetti with the paprika tomato sauce & serve garnished with basil if desired. Have fun cooking!
