Instructions:
…for bluberry scones:
Preheat the oven to 220 degrees (top/bottom heat). Put 500 grams of flour, 1 sachet of baking powder, 75 grams of sugar, half a teaspoon of salt and 125 grams of butter (cut into small pieces) in a mixing bowl & knead or mix with your hands until the butter is evenly distributed & it feels like a very floury crumble dough.
Next, add 250 milliliters of milk and 2 medium-sized eggs & briefly stir into the flour-butter mixture with a spoon. Then fold in the blueberries without crushing the berries. Afterwards put the finished dough on a well-floured work surface, also flour it well from above & now carefully “fold” it a few times together.
Flour the dough from time to time, if necessary, & then gently flatten it with your hands to about 4 – 5 centimeters thick, being careful not to crush the blueberries in the dough. Cut out the dough with a round cutter & place the scones next to each other on a baking tray lined with baking paper.
Knead the remaining dough together again & cut out more scones & place on the baking sheet. Brush the scones with beaten egg before baking & then bake in the preheated oven for 15 – 18 minutes until golden brown. Take the finished scones out of the oven, let them cool down a bit and serve them lukewarm. Happy baking!
