…for meatballs with curry tomato sauce:
Put 500 grams of ground meat together with 50 grams of breadcrumbs, 1 large egg, ½ teaspoon of smoked paprika powder & a good pinch of salt & pepper in a mixing bowl & knead with your hands until all ingredients are evenly distributed. Then form about 24 small meatballs of the same size & set aside. Peel 1 onion and 1 – 2 cloves of garlic & chop finely.
Then heat a large pan with a good dash of oil & fry the meatballs over medium heat for 4 – 5 minutes until brown all over, turning from time to time & then lifting them out of the pan & set aside. Next, add the onions & garlic to the pan & sweat for 2 – 3 minutes, turning occasionally.
Next stir 1 tablespoon of tomato paste and 1 heaped teaspoon each of curry powder and sweet paprika into the onions, sweat briefly and then deglaze with 150 milliliters of orange juice. Afterwards pour in 700 milliliters of tomato passata, also add 1 heaping tablespoon of hot/spicy ajvar & season everything with a good pinch of salt, pepper & some sugar to taste.
Finally, put the meatballs back into the pan, stir everything well one last time, bring to the boil & simmer gently for a few minutes until the meatballs are cooked. Spread the finished meatballs with curry sauce on plates & serve together with a portion of fries & some extra curry powder on top. Bon appetit & have fun cooking!
