Ground meat can be used in many ways, but meatballs are by far the most popular form of cooking ground meat. About a year ago I showed you a recipe for oven-baked meatballs with a creamy mushroom sauce, where the meatballs were simply cooked in the oven.
In today’s post I will show you a variant for meatballs that are fried & then cooked together with teriyaki sauce & veggies (bell peppers, broccoli & mushrooms) to the end in one and the same pan. Super easy to prepare & all you need is a large pan with a lid. Have fun cooking!

Ingredients for 4 servings:

- 500 grams ground meat (half beef/half pork)
- 50 grams breadcrumbs
- 2 eggs (medium size)
- 1 small onion
- 1 heaping teaspoon sambal oelek
- Salt & pepper
- Oil for frying

- 300 grams broccoli
- 250 milliliters apple juice
- 200 grams brown mushrooms
- 75 milliliters soy sauce
- 1 red bell pepper
- 2 – 3 cloves garlic
- 1 small piece ginger
- 2 tablespoons vinegar
- Salt & pepper
- Parsley for garnish
- Cooked rice for serving

- Tall container or bowl for sauce
- Fine grater
- Whisk
Instructions:
…for meatballs with teriyaki sauce, paprika, broccoli & mushrooms:
Peel an onion and chop finely. Put 500 grams of minced meat together with the onion cubes, 2 eggs, 50 grams of breadcrumbs, 1 heaped teaspoon of Sambal Oelek, & a good pinch of salt and pepper in a mixing bowl & knead with your hands until all the ingredients are evenly distributed. Then form 12 balls or meatballs of approximately the same size from the meat dough.
For the sauce, peel 2 – 3 cloves of garlic and a small piece of ginger and grate finely. Put the ginger and garlic together with 1 heaped teaspoon of cornstarch, 250 milliliters of apple juice, 75 milliliters of soy sauce, 2 tablespoons of vinegar and a good pinch of pepper in a tall container or bowl and stir until smooth with a whisk, then set aside until further use.
Clean and slice the mushrooms. Wash, deseed and cut the peppers into strips. Divide the broccoli into small florets, peel the stalk and cut into small pieces. Next, heat a large pan with a good splash of oil, add the meatballs to the hot pan and fry them for 2 – 3 minutes on each side over medium heat until golden brown, turning once.
When that’s done, lift the meatballs out of the pan and set them aside for a moment. Add the prepared vegetables to the pan & fry for another 2 – 3 minutes over medium heat, stirring occasionally & seasoning with salt & pepper. Then pour in the prepared sauce, put the meatballs back in the pan and let everything simmer for 5 – 6 minutes with the lid closed until the meatballs are cooked.
Sread the meatballs with teriyaki sauce and vegetables on plates, serve with cooked rice and garnish everything with finely chopped parsley. Have fun cooking! Bon appetit!
