Today’s post is all about what is probably the most popular side dish in Balkan cuisine, namely Djuvec rice. Today I will show you a recipe for Djuvec rice fritters or patties with peas & peppers, which you can easily prepare from cooked & leftover rice from the day before.
As a side dish we prepare a quick cucumber salad with a dressing made of sour cream, dill, vinegar & oil. The cucumber salad with its dressing goes perfectly with the rice patties & is the ideal side dish. Have fun cooking!

Ingredients for 4 servings:
…for cucumber salad:
- 2 cucumbers
- 200 grams sour cream
- Salt & pepper
- Oil & white wine vinegar
- A few sprigs of fresh dill (alternatively 2 teaspoons chopped frozen dill)
…for rice patties:
- 500 grams of cooked rice (for example from the day before)
- 4 medium sized eggs
- 150 grams frozen peas
- 125 grams breadcrumbs
- 2 heaping tablespoons spicy/hot ajvar
- 1 red bell pepper
- 1 large onion
- 1 – 2 cloves garlic
- 2 teaspoons savory
- Oil for frying
- Salt & pepper
Required kitchen gadgets, helper & preparations:
- Grater for the cucumbers
- Mixing bowl for the cucumber salad
- Mixing bowl for the rice mixture
- Large pan for the rice patties
- Plate + kitchen paper for draining
…for djuvec rice fritters with ccumber salad:
Finely chop the dill. Wash the cucumbers, cut into thin slices with a grater & place in a mixing bowl. Add 200 grams of sour cream, chopped dill, a dash of oil as well as white wine vinegar and season everything with a good pinch of salt and pepper, then stir well and set aside until ready to serve.
For the rice patties, wash a red bell pepper, deseed it and cut into fine cubes. Peel and finely chop the onion & garlic. Next, heat a pan with a dash of oil, add the peppers, onions & garlic to the pan & sweat for 3 – 4 minutes over medium heat, turning occasionally.
Finally, add 150 grams of frozen peas to the pan, stir in briefly, then remove the pan from the stove & put the fried vegetables together with 500 grams of cooked rice (e.g. from the day before) in a large mixing bowl.
Then add 2 heaped tablespoons of spicy ajvar, 4 eggs, 125 grams of breadcrumbs, 2 teaspoons of savory and a very good pinch of salt & pepper & stir everything together well so that all the ingredients can be evenly distributed.
Next, heat a large pan with a good dash of oil, form small patties or meatballs from the rice mixture with lightly oiled hands, place in the hot pan & fry for 3 – 4 minutes over medium heat until golden brown from one side.
Carefully turn the patties once & fry for another 3 – 4 minutes on the other side, then lift them out of the pan & let them drain briefly on kitchen paper. Repeat for the rest of the rice mixture. Then place the rice fritters on plates together with the prepared cucumber salad and serve. Have fun cooking!
