Plum cake is a sheet cake that is traditionally made from yeast dough, but there are also variants with, for example, sponge batter. The dough is spread out on a baking sheet, topped with plums & butter crumbles and baked until golden brown.
In today’s post, I’ll show you a simple recipe for a delicious plum cake with yeast dough & crispy crumbles. Have fun baking!

Ingredients for 1 Sheet Plum Cake:
- 1,25 kilograms plums
- 550 grams flour
- 175 milliliters milk
- 150 grams butter
- 150 grams sugar
- 1 sachet vanilla sugar
- 10 grams fresh yeast
- Additional flour for the countertop

- High container for the yeast mixture
- Whisk

- Mixer/Kitchen machine

- Baking sheet + parchment paper
- Rolling pin
Instructions:
…for yeast dough:
Crumble 10 grams fresh yeast in a tall container, add 50 grams of sugar, 1 sachet of vanilla sugar & 175 milliliters of lukewarm milk & stir together with a whisk or fork until the yeast & sugar have completely dissolved.
Next, put the yeast-milk mixture along with 350 grams of flour & 50 grams of soft butter in a mixing bowl & knead with a food processor or a mixer with a dough hook for about 4 – 5 minutes to form a smooth dough that should detach completely from the bowl wall.
…for plum cake:
Roll out the dough on a lightly floured work top with a rolling pin until the size of a baking sheet, lift it onto a baking sheet lined with baking paper & allow to rest in a warm place for 45 minutes covered with a kitchen towel, possibly playce a baking frame around the dough.
In the meantime, cut 1,25 kilograms of plums in half with a knife, remove the core and quarter it, then set aside. For the crumble, put 200 grams of wheat flour, 100 grams of sugar & 100 grams of cold butter in a mixing bowl & knead with your hands to form a crumbly dough, also set aside.
Preheat the oven to 200°C (top/bottom heat) in good time. After the resting time, top the yeast dough with the quartered plums, also sprinkle everything with the prepared crumbles & then push the baking sheet into the preheated oven for 25 – 30 minutes until the crumbles are golden brown and crispy.
Take the done plum cake out of the oven, allow to cool down a little on the baking sheet, then cut the cake into pieces & ideally serve it lukewarm with whipped cream or a scoop of vanilla ice cream. Have fun baking!
