Chicken & peanut, both delicious on their own, but just super delicious in combination. In today’s post I’ll show you a quick & easy recipe for chicken breast fillets with peanut sauce.
For the peanut sauce, all the ingredients are simply mixed briefly and then boiled up in a hot pan together with peanut butter. It couldn’t be easier 🙂 Have fun cooking!

Ingredients for 4 servings:
- 4 chicken breast fillets
- 400 milliliters coconut milk
- 2 cloves garlic
- 1 small piece ginger
- 1 teaspoon sambal oelek
- 1 heaping teaspoon curry powder
- 1 lime
- 4 – 5 tablespoons soy sauce
- 1 heaping tablespoon creamy peanut butter
- Oil for frying
- Salt & pepper
- Fresh parsley or cilantro for garnish
Required kitchen gadgets, helper & preparations:
- Mixing bowl
- Whisk
- Fine grater
- Lemon juicer
- Large frying pan with lid
Instructions:
…for chicken with peanut sauce:
Peel ginger and garlic and grate finely with a grater, place in a mixing bowl. Squeeze the lime & pour the juice into the mixing bowl as well. Also add 1 teaspoon of sambal oelek, 1 heaping teaspoon of curry powder, 1 can of coconut milk, a good dash of soy sauce & a small pinch of salt and pepper & mix everything with a whisk, then set aside.
Next, heat up a large pan with a dash of oil, add the chicken breast fillets to the pan & fry on both sides for 4 – 5 minutes until brown & crispy, season with a little salt & pepper. Then lift the chicken out of the pan, set aside for a moment & afterwards add the prepared sauce and a heaping tablespoon of creamy peanut butter to the pan.
Melt the peanut butter in the sauce while stirring & bring everything to a boil. Then return the chicken to the pan & allow to simmer really gently with the lid closed for 2 – 3 minutes over low to medium heat until cooked. In the meantime, finely chop the cilantro or parsley for the garnish and set aside.
Info: Only simmer the chicken very briefly and gently (with reduced heat) in the sauce until it is just cooked through. If the chicken cooks for too long in the sauce, it will quickly become tough and dry.
Dish up the chicken on plates along with cooked rice, serve with the peanut sauce and garnish with finely chopped parsley or finely chopped cilantro. Have fun cooking!
