A “One Pot Pasta” is a fast pasta dish where all the ingredients, including the pasta, are cooked in a pot. The noodles are cooked together with all other ingredients and thus absorb the taste of the sauce during the cooking time.
A few weeks ago I already showed you a recipe for a one pot pasta with meat sauce, in today’s post I show you a variant with tagliatelle pasta & a creamy ricotta spinach sauce. Have fun cooking!

Ingredients for 4 servings:
- 500 grams tagliatelle pasta (or any other pasta shape of your choice)
- 1 liter water
- 1 large onion
- 2 – 3 cloves garlic
- 300 grams of spinach leaves (frozen)
- 200 grams of cherry tomatoes
- 200 grams of ricotta
- Salt & pepper
- Oil for frying
Required kitchen gadgets, helper & preparations:
- Large pan or pot with lid
Instructions:
…for One Pot Pasta:
Peel onion & finely chop. Also peel off garlic and chop finely. Halve cherry tomates & set aside. Heat up a large pan or pot adding a dash oil, add onions & garlic to the pan & sweat until translucent for 2 – 3 minutes over medium heat, stirring occasionally.
Next add 500 grams tagliatelle pasta, 1 liter water, 300 grams frozen spinach leaves and 1 heaping teaspoon of salt, give everything a good stir & then bring to a simmer. Allow to simmer gently with the lid closed for about 10 – 12 minutes over low to medium heat until the pasta is done & has absorbed most of the liquid, stirring occasionally.
Finally, add 200 grams ricotta cheese, teh halved cherry tomatoes and a good pinch of pepper, stir well one last time and then remove the pan from heat. Spread the pasta on deep plates and serve. Have fun cooking!
