Blueberry Cheesecake with Crumbles

This week I was picking blueberries at a near berry farm with my daughter. We filled our bellies pretty well and of course we brought home a big bucket of blueberries.

Therefore, in today’s post I will show you a recipe for a super delicious blueberry cheesecake with crumbles. The preparation is super easy & the cake is ready for the oven after 15 – 20 minutes of preparing. Have fun baking!

Ingredients for a sheet Blueberry Cheesecake with Crumbles:

…for dough & crumbles:

  • 600 grams flour
  • 300 grams butter
  • 200 grams sugar
  • 1 egg
  • 1 sachet vanilla sugar
  • 1 sachet baking powder

…for quark layer:

  • 1000 grams quark
  • 500 grams blueberries
  • 125 grams sugar
  • 125 grams melted butter
  • 5 eggs
  • 1 organic lemon

Required kitchen gadgets, helper & preparations:

  • 2 Mixing bowls
  • Mixer
  • Grater
  • Baking sheet + baking paper

Instructions:




…for crumbly dough:

Preheat the oven to 180 C (top/bottom heat). Line a baking sheet with parchment paper. Cut butter into pieces and put along with 600 grams flour, 200 grams sugar, 1 egg & a sachet each of baking powder and vanilla sugar in a mixing bowl, then knead everything together with your hands for 2 – 3 minutes to a crumbly dough.

In a second mixing bowl combine 5 eggs, 125 grams sugar, 125 grams melted butter & the zest of an organic lemon & beat until frothy with a blender for 1 – 2 minutes. Next add 1000 grams of quark & stir in until well combined & you got a smooth mixture.




…for blueberry cheesecake with crumbles:

Put ⅔ crumble dough onto the prepared baking sheet & press on evenly. Next, pour quark mixture on top & spread evenly, finally sprinkle everything with 500 grams of blueberries & the rest of the crumble dough. Bake the cake in a preheated oven at 180°C (top/bottom heat) for about 50 – 60 minutes until golden brown.

Get the done cake out of the oven, allow to cool a bit & then cut into squares & serve. Have fun baking!

    1. Hello! Here in Germany you can find Speisequark with differrent fat content, 10%, 20% & 40%. You can use any of that for this recipe, I used the 10% one here. Of course you can also use frozen berries for this recipe instead!

    I have a 22 cm round cake springform, which measurement shall I choose?

      This recipe serves about 15 – 20 cake portions, depending on how large the cake pieces will be cut. For a 22cm round springform pan I would use about 1/3 of the recipe ingredients, because this is a sheet cake measurement. Hope this will hep you & thank you for commenting!
