Wintertime is soup or stew time. When it gets colder outside, there is nothing better than a warming soup or a hearty stew.

In today’s post, I’ll show you a simple & easy recipe for a hearty pea soup with Wieners. Have fun cooking! 🙂

Simple Pea Soup with Wieners

Ingredients for 4 – 6 servings:

  • 750 grams frozen baby peas
  • 1,25 liters vegetable stock
  • 1 bunch or 500 grams mirepoix/soup veggies (carrots, celeriac, leek & parsley)
  • 3 – 4 potatoes
  • 1 large onion
  • 1 teaspoon dried thyme
  • 1 teaspoon dried marjoram
  • 1 tablespoon mustard
  • Red wine vinegar
  • 6 – 8 Wieners
  • Salt & pepper
  • Oil for frying

Required kitchen gadgets, helper & preparations:

  • Large pot for pea soup
  • Blender

Instructions:

Peel and roughly chop the onion. Peel potatoes, celery & carrots & cut into small pieces. Cut the leek into fine rings. Finely chop parsley (from the soup veggies) & set aside for garnish. Take 750 grams of young/baby peas out of the freezer & allow to thaw until further use.

Heat up a large pot or pan with a good dash of oil & sweat the prepared vegetables for 4 – 5 minutes over medium heat & occasionally turning. Next, add 1 teaspoon each of marjoram and thyme, also add the young/baby peas, stir everything well and pour on with 1,25 liters of vegetable stock.




Then bring the soup to a boil & allow to simmer gently over low to medium heat for approx. 12 – 15 minutes until the vegetables are cooked or have reached the desired consistency. Meanwhile, cut the Wieners into thin slices with a knife and set aside.

Finally, or after about 15 minutes, add a tablespoon of mustard, a good shot of red wine vinegar & a good pinch of salt & pepper to taste, then mix the soup for 15 – 20 seconds with a hand blender until the soup is lightly thickened and got a beautiful green color.




Afterwards add the Wiener sausages to the soup, heat everything again briefly & then spread the soup on deep plates & serve garnished with a little parsley. Have fun cooking!
