- Large frying pan with lid
- 2 spatulas
Instructions:
…for the dough:
Crumble ¼ cube of fresh yeast into a tall container, add 1 teaspoon sugar & 200 milliliters of lukewarm water, then mix together everything using a whisk or fork until yeast and sugar have completely dissolved.
Then put the yeast-water mixture together with 350 grams of flour, a good dash of olive oil & 1 teaspoon of salt in a mixing bowl & knead with a food processor or mixer with dough hook for about 4 – 5 minutes to form a smooth dough.
Put the dough on a lightly floured work surface, also flour a little from above & knead briefly with your hands from the outside inwards & shape into a ball, then cut into 4 equal sized pieces & shape into small balls.
Dust the dough balls with a little flour on top & cover with a kitchen towel and allow them to rest for 30 minutes in a warm place until the dough has increased a bit in volume.
After the resting time, roll out the dough balls one after the other on a lightly floured work surface with a rolling pin to the size of a plate. Brush the pizza with 2 tablespoons of pureed tomatoes, season with oregano, salt & pepper & and finally sprinkle with a good portion of grated cheese.
Then fold everything up into a calzone pizza & press the edges firmly or screw in to close the calzone tightly. Finally, spread another tablespoon of tomato puree on top of the calzone, cover with 4 – 5 slices of salami & prick the surface of the dough 2 – 3 times with a fork so that steam can escape while baking.
To bake, heat up a large pan with a good dash of oil, carefully lift the calzone pizza into the pan & bake with the lid closed for 4 – 5 minutes over low to medium heat until the underside has turned into a golden brown color.
Then turn the calzone once with the help of 2 spatulas & bake for another 3 – 4 minutes with the lid closed on the salami side. Afterwards take the done pizza off the stove, cut into pieces and serve. Have fun baking!
