A pide pizza is an elongated & boat-shaped pizza that is widely used in Turkey. A pide pizza can be topped differently depending on the region, e.g. with ground beef, cheese or even spinach.
A few years ago I showed you a delicious recipe for a Turkish pide pizza with ground beef. In today’s post, I’ll show you another recipe for delicious pide pizzas, this time topped with cheese & egg. Have fun cooking!

Ingredients for 4 servings:
…for yeast dough:
- 250 grams flour
- 100 milliliters water
- 25 milliliters oil
- 1 tablespoon yogurt
- ¼ cube fresh yeast (about 10 grams)
- ½ teaspoon salt
- ½ teaspoon sugar
- Flour for countertop
…for pide topping:
- 200 grams creme fraiche
- 200 grams grated cheese
- 4 eggs
- Salt & pepper
…more ingredients:
- 1 whisked egg for brushing the pide crust
- Black sesame seeds for sprinkling the pide crust
Required kitchen gadgets, helper & preparations:
- Tall container for yeast water mixture
- Whisk or fork
- Mixing bowl
- Mixer with dough hooks or kitchen machine
- Kitchen towel
- Rolling pin
- Baking sheet + baking paper
- Brush
Instructions:
Crumble ¼ cube of fresh yeast in a tall container, add ½ teaspoon of sugar and 100 milliliters of lukewarm water & stir everything with a whisk or fork until the yeast and sugar have completely dissolved.
Then put the yeast-water mixture together with 250 grams of flour, 25 milliliters of oil, 1 tablespoon of yoghurt & ½ teaspoon of salt in a mixing bowl & knead with a food processor for 4 – 5 minutes to form a smooth dough that should detach completely from the bowl wall.
Shape the done dough into a ball, put it back in the mixing bowl & then cover with a kitchen towel to rest in a warm place for 30 – 45 minutes until the volume has increased significantly.
For the cheese filling, put 200 grams of creme fraiche, 200 grams of grated cheese & a good pinch of salt & pepper in a small bowl, stir together & set aside. Whisk an egg in a cup and set aside as well.
Preheat the oven to 180°C (top/bottom heat) in good time. After the resting time, knead the dough with your hands for about 1 – 2 minutes on a lightly floured work surface, then cut into 4 pieces of about the same size with a knife & shape all pieces of dough into small balls.
Then roll out all the dough balls one after the other with a rolling pin on a lightly floured work surface into elongated & oval dough flatbreads.
Place 2 flatbreads next to each other on a baking sheet lined with baking paper & spread ¼ of the cheese mixture evenly on the dough, making sure to leave a small edge free.
Fold the edges about 1 centimeter over the filling & squeeze the tips a little at the ends to form small “boats”. Finally, brush the edges with the whisked egg & sprinkle a few black sesame seeds over the edges. Then bake the pide boats for 10 – 12 minutes in the preheated oven.
Take the pide out of the oven after about 12 minutes, crack an egg into the pide boats & put it back in the oven for another 7 – 8 minutes until the egg white has thickened. Take the done pide out of the oven & serve garnished with some finely chopped parsley. Have fun baking!
