Instructions:
…for oatmeal bread rolls:
Bring 200 milliliters of water to a boil in a kettle or on the stove, then put 100 grams of rolled oats in a suitable bowl, pour the boiling water over it & set aside until the oat flakes mixture is cooled a bit & only lukewarm.
Meanwhile, crumble ¼ cube of yeast in a tall container, add 1 teaspoon of sugar and 200 milliliters of lukewarm milk & stir with a whisk or fork until the sugar and yeast have completely dissolved.
Then put the yeast milk mixture together with 400 grams of wheat flour, the lukewarm oat flakes & 1 teaspoon of salt in a mixing bowl & knead with a food processor or a mixer with dough hook for 4 – 5 minutes to form a smooth and still slightly sticky dough.
Then cut the dough into 8 – 10 pieces of roughly the same size on a lightly floured work surface & shape into small balls with circular movements under the palms of the hands.
Place the dough balls with a little distance to each other on a baking sheet lined with baking paper, cover with a kitchen towel & let rest for 30 – 45 minutes in a warm place until the dough volume has increased significantly.
Preheat the oven to 200°C (top/bottom heat) in good time. After the resting time, brush the oatmeal bread rolls with a little water & then decorate with a few oat flakes on top.
Then put the bread rolls in the preheated oven & bake for 15 – 20 minutes until golden brown, take them out of the oven after baking, let them cool on the tray or a wire rack & then best serve lukewarm. Bon appetit & have fun baking!
