In today’s post, I’ll show you a recipe for asparagus & ham bread rolls with a quick & easy hollandaise sauce. The dough for the bread rolls is portioned (as we did it with the sausage bread rolls), then wrapped around the ham and asparagus rolls and baked in the oven.
Asparagus & ham bread rolls & hollandaise sauce are ideal party food & definitely a hit on every buffet. Tip: The hollandaise sauce can easily be kept warm for several hours in a thermo mug. Have fun cooking!

Ingredients for 8 Asparagus & Ham Bread Rolls:

- 16 spears asparagus (not too thick)
- 16 thin slices ham
- 400 grams flour
- 225 milliliters water
- 1 teaspoon each of salt & sugar
- ½ cube fresh yeast (about 20 grams)
- 1 egg
…for sauce hollandaise:
- 250 grams butter
- 2 egg yolks
- 25 milliliters water
- A pinch of salt
- A dash lemon juice
Required kitchen gadgets, helper & preparations:
- Peeler for asparagus
- Tall container for yeast water mixture
- Whisk
- Mixing bowl
- Kitchen machine or mixer
- Kitchen towel
- Baking tray + baking paper
- Small bowl
- Brush
- Tall container for hollandaise sauce
- Immersion Blender
- Saucepan to melt & simmer butter
Instructions:

Peel asparagus, cut off the woody ends & then wrap 2 spears each with 2 slices of ham & place them ready. Crumble ½ cube of yeast in a tall container, add 1 teaspoon of sugar and 225 milliliters of lukewarm water & stir everything with a whisk or fork until the yeast and sugar have completely dissolved.
Then put the yeast-water mixture together with 400 grams of flour & 1 teaspoon of salt in a mixing bowl & knead with a food processor or a mixer with a dough hook for about 4 – 5 minutes to form a smooth dough.
Then cut the dough into 8 equal sized pieces with a knife, shape all the dough pieces into a long string one after the other under the palms of your hands (about twice the length of the asparagus rolls) & then wrap them tightly around the asparagus ham rolls.
Place the ready-formed rolls with a little space between them on a baking sheet lined with baking paper & cover with a kitchen towel and leave to rest in a warm place for 30 – 45 minutes.
Preheat the oven to 200°C (top/bottom heat) in good time. Whisk an egg in a small bowl & prepare. After the resting time, brush the rolls with the whisked egg & bake for about 20 minutes in the preheated oven until golden brown, then take them out of the oven & allow them to cool a little on the tray.
Meanwhile, for the hollandaise sauce, melt the butter in a saucepan over low to medium heat. Put 2 egg yolks & 25 milliliters of water in a tall conatiner & mix with a hand blender for about 10 – 15 seconds until foamy.
As soon as the butter is completely melted & begins to simmer, remove from the stove & immediately pour into the egg yolk mixture in a thin stream. Mix in the butter with the hand blender until all the butter is used up & you got a creamy & frothy hollandaise sauce.
Season the finished hollandaise sauce with salt and a little lemon juice & then serve along with the asparagus ham bread rolls. Have fun baking!
