It doesn’t always have to be meat on the table, because veggie is also a good opportunity. In today’s post I will show you a delicious alternative to meat patties, so we cook corn bean fritters with a delicious tomato salsa.
The recipe is super simple and very quick to prepare. The dough for the patties/fritters is only briefly pureed or stirred together & then the frying can start. Have fun cooking!

Ingredients for 4 servings:
…for tomato salsa:
- 3 – 4 tomatoes
- 2 – 3 spring onions
- 1 lime
- 1 – 2 clove(s) of garlic
- Olive oil
- 1 handful cilantro (or parsley)
- Salt, sugar & pepper
…for tex mex fritters:
- 1 can corn (300 grams)
- 1 can black beans (300 grams)
- 2 eggs
- 2 heaping tablespoon flour
- 1 heaping teaspoon cumin
- Salt & pepper
- oil for frying
Required kitchen gadgets, helper & preparations:
- Mixing bowl
- Immersion blender
- Large frying pan
- Kitchen paper
- Bowl for tomato salsa
- Garlic press
- Lemon juicer
Instructions:

For the salsa, cut the spring onions into fine rolls & cut the tomatoes into fine cubes. Finely chop the cilantro (alternatively parsley). Then put all the prepared ingredients in a small bowl & add 1 – 2 clove(s) of pressed garlic.
Add the juice of 1 lime & a good dash of olive oil & stir everything well together. Finally, season the tomato salsa with a good pinch of salt, pepper & sugar to taste & set aside until serving.
For the corn bean patties, combine 1 can of corn (drained), 2 eggs, 2 heaping tablespoons of flour, 1 heaping teaspoon of cumin & a good pinch of salt & pepper in a mixing bowl & mix with a hand blender for about 30 seconds until all ingredients are evenly mixed & slightly thickened
Drain a can of black beans (or kidney beans), rinse briefly & then stir/fold into the corn mixture. Heat up a large pan with plenty of oil, give the dough into the pan in portions of 1 – 2 tablespoons & fry golden brown for 3 – 4 minutes on each side over medium heat.
Carefully turn the corn bean patties once, then lift out of the pan & drain on kitchen paper. Dish up the done corn bean fritters on plates & serve with the tomato salsa. Have fun cooking!
