Instructions:
…for bean & beef pot with potatoes:
Peel the potatoes & cut into small cubes or pieces. Peel and roughly chop the onion. Also peel off the garlic & cut into thin slices. Wash green beans & cut off the ends, or if frozen beans are used, get them out of the freezer in good time & allow to defrost a bit.
Heat up a large pan with a good dash of oil, add the onions & garlic to the pan & sweat until translucent over a medium heat for 2 – 3 minutes, turning occasionally. Next, add 500 grams of ground beef, season with a pinch of salt & pepper to taste & fry until crumbly for another 3 – 4 minutes.
When that’s done, add 1 heaping teaspoon each of savory, oregano & sweet paprika powder to the pan, stir in briefly & allow to sweat with it. Then put the prepared potatoes, the green beans, 1 heaping tablespoon of spicy ajvar & 1 can of chopped tomatoes into the pan & then pour in water until everything is just covered with liquid.
Tip: The green beans can also be added 6 – 7 minutes before the end of the cooking time, so they stay a little crisp and retain their green color.
Bring the bean & beef pot to a boil & then allow to simmer for 12 – 15 minutes over medium heat until the potatoes are cooked, stirring every now and then.
Finally, season the finished bean & beef pot with salt & pepper to taste, then remove from the stove and serve garnished with finely chopped parsley. Have fun cooking at home!
Serving suggestion: Bread is ideal as a side dish, and of course a dab of sour cream or creme fraiche for serving the stew 😉
