This year we’re starting with a quick & vegetarian recipe, and today I’m going to show you a recipe for a one pot pasta with tomatoes & spinach leaves. This recipe is great for those who don’t want to stand in the kitchen for long, just prepare all the ingredients & then put them in the pan. Have fun cooking at home!

Ingredients for 4 servings:
- 500 grams spiral pasta (or other type of pasta)
- 800 milliliters water
- 250 grams colorful cherry tomatoes
- 200 milliliters cream
- 150 grams fresh spinach leaves
- 1 can chopped tomatoes (400 grams)
- 50 grams garted Parmesan cheese
- 1 large onion
- 1 – 2 cloves garlic
- 1 heaping teaspoon dried oregano
- Chilli flakes to taste
- Salt & pepper
- Oil for frying
Required kitchen gadgets, helper & preparations:
- Large pan or pot with lid
Instructions:
…for One Pot Pasta with Tomatoes & Spinach:
Peel off the onion & chop finely. Also peel off the garlic & chop finely. Then heat up a large pan (or a large pot) with a dash of oil, add onions & garlic to the pan & sauté over medium heat & occasionally turning for 2 – 3 minutes until translucent.
Then add 500 grams of spiral pasta, 1 can of chopped tomatoes, 800 milliliters of water, 200 milliliters of cream, 2 teaspoons of salt, 1 heaping teaspoon of oregano & a quarter teaspoon of chilli flakes to the pan & give everything a good stir.
Bring the contents of the pan to a boil & simmer gently with the lid closed over low heat for about 10 – 12 minutes, stirring every now and then. Meanwhile, prepare the remaining ingredients: wash the spinach leaves, halve the cherry tomatoes & grate the parmesan.
As soon as the pasta is done & has absorbed almost all of the liquid, stir the halved tomatoes, the spinach & a generous handful of grated Parmesan into the pasta, season everything again with salt & pepper to taste & then spread the one pot pasta on deep plates & serve. Have fun cooking at home!
