In the last few months I have presented you a variety of different one pot pasta recipes, including a Mexican one with corn & beans, a classic Italian with ricotta & spinach or, for all seafood lovers out there, with shrimps.

In today’s post I will show you a super simple & delicious Asian one pot pasta, today we are cooking a vegetarian one pot pasta with tasty teriyaki sauce & lots of vegetables. Have fun cooking at home!

Ingredients for 4 – 6 servings:

  • 250 grams tagliatelle pasta (or any other pasta type)
  • 400 milliliters water
  • 250 grams brown mushrooms
  • 200 grams green beans
  • 2 bell peppers (red & yellow)
  • 2 sping onions
  • 1 small piece ginger
  • 2 – 3 cloves garlic
  • 100 milliliters pineapple juice
  • 100 milliliters soy sauce
  • Maple syrup
  • Salt & pepper

Required kitchen gadgets, helper & preparations:

  • Large pan or pot with lid
  • Fine grater


…for One Pot Pasta:

Clean the mushrooms & cut into slices. Wash the green beans, cut off the ends & cut in half. Core the peppers & cut into bite-sized pieces. Cut the spring onions into fine rolls & set aside for the garnish.

Put on a large pan or saucepan, spread 250 grams of tagliatelle in it, also add the prepared vegetables (mushrooms, peppers & beans) & grate 2 – 3 cloves of garlic and a small piece of ginger into the pan.

Finally, pour in 400 milliliters of water, 100 milliliters of pineapple juice and 100 milliliters of soy sauce & add a dash of maple syrup, heat up the pan, bring to a boil & then allow to simmer gently with the lid closed over low heat for about 10 – 12 minutes.

Stir the pasta from time to time so that all ingredients can be evenly distributed & nothing can burn on the bottom of the pan. As soon as the noodles are cooked & have absorbed the liquid almost completely, season everything with salt & pepper & serve garnished with the spring onions. Have fun cooking!
