It goes on & on in our this year’s cookie bakery! After I have already presented you these delicious cantuccini or biscotti cookies & thumbprint cookies with brittle, I continue today with a recipe for shortcrust pastry cookies filled with jam & decorated with coconut flakes.
The cookies consist of a quick cookie dough or shortcrust pastry that is filled with jam. In addition, I roll the filled biscuits in coconut flakes. As an alternative to the star cookie cutter, you can of course also use any other cookie cutter for this recipe. Have fun baking!

Ingredients for about 25 Baking Jam Filled Coconut Star Cookies:
- 300 grams flour
- 200 grams cold butter (cut into small pieces)
- 100 grams powdered sugar
- 1 egg yolk
- 1 sachet vanilla sugar
- A pinch of salt
- 125 grams red jam to fill cookies
- 50 grams coconut flakes to coat cookies
Required kitchen gadgets, helper & preparations:
- Mixing bowl
- Rolling pin
- Star cookie cutter
- Baking sheet + baking paper
- Brush or spoon to brush cookies
- Small bowl for coconut flakes
…for jam filled coconut star cookies:
Preheat the oven to 180°C (top/bottom heat). Line a baking sheet with parchment paper. Separate 1 egg into egg yolk & egg white, use the egg yolk for this recipe & use the egg white for other ones, for example for this delicious coconut macaroons. Cut the cold butter into small pieces.
Next, put 300 grams of flour together with an egg yolk, 200 grams of cold butter, 100 grams of powdered sugar, 1 sachet of vanilla sugar & a pinch of salt in a mixing bowl & knead with your hands to form a smooth dough. If the dough seems to be too sticky, just add a little more flour.
Roll out the dough on a lightly floured work surface to a thickness of about 0.5 centimeters with a rolling pin & then use a star-shaped cookie cutter to cut out cookies. Place the cut-out star cookies on the prepared baking sheet & bake in the preheated oven for about 10 minutes until golden brown, then take them out of the oven & allow them to cool down completely.
“Glue” 2 star cookies together with some red jam, then coat the surface with a little more red jam & roll the jam side in desiccated coconut or sprinkle with desiccated coconut.
Tip: Briefly warm up the jam in the microwave or in a saucepan so you can portion and spread out the jam easier. For this recipe I used cherry jam, which goes very well with the coconut note!
Then serve the done jam filled coconut star cookies straight away or store them in a cookie jar, so they will stay fresh for several weeks. I wish you a Meryy Christmas & Have fun baking!
