After I showed you a delicious noodle salad with tzatziki dressing 2 weeks ago, this time an Asian-flavored glass noodle salad with shrimps, peppers & spring onions is coming to the table.
Simply pour boiling water over the glass noodles, wait about 5 minutes until they are done & then we can continue cooking. In the meantime, you can take care of the remaining ingredients & the salad is on the table in no time at all. Ideal as a main meal or for the barbecue party. Have fun cooking!

Ingredients for 1 large bowl full of salad:
- 400 grams shrimps (peeled & deveined)
- 200 grams glass noodles
- 3 bell peppers
- 1 bunch spring onions
- 1 small piece of ginger
- 2 – 3 cloves garlic
- 2 small limes
- Soy sauce
- Sweet chili sauce
- Salt & pepper
- Oil for frying
- Parsley or cilantro for garnish
Required kitchen gadgets, helper & preparations:

- Large bowl or pot for glass noodles
- Pasta strainer
- Large bowl for salad

…for glass noodle salad with shrimps & pepeprs:
Heat the kettle with plenty of water & bring the water to the boil. Put 200 grams of glass noodles in a suitable bowl/pot & pour boiling water over it, then set aside for 7 – 8 minutes. Drain the done glass noodles over a pasta strainer, rinse briefly with cold water & allow to steam off.
Meanwhile, deseed the peppers and cut into bite-sized pieces. Cut the spring onions into fine rolls. Then heat up a pan with a dash of oil, add the prawns & peppers to the pan & sauté for 2 – 3 minutes, turning occasionally, season with salt & pepper & finally stir in the spring onions.
For the dressing, squeeze 2 limes with a lemon squeezer. Finely grate garlic & ginger with a grater. Put 75 – 100 milliliters of sweet chili sauce as well as soy sauce together with the lime juice, garlic & ginger in a mixing bowl & mix with a whisk.
Finally add the shrimp and paprika mixture and the drained glass noodles to the dressing, stir everything together well and then spread on deep plates and serve garnished with chopped parsley or coriander. Have fun cooking!
