Now when the temperatures are rising all the time, the dishes for lunch should be fresh, light and preferably quick and prepared without an oven or pan. That’s why instant couscous is ideal for summer cooking, just pour hot water over it and let it swell.

In today’s recipe I’ll show you a quick recipe for a delicious couscous salad with lots of vegetables and feta cheese. Prepared super quickly & on the table in a maximum of 20 minutes. Have fun cooking!

Ingredients for 4 – 6 servings:

  • 250 grams instant couscous
  • 400 grams small tomatoes
  • 1 cucumber
  • 1 bunch spring onions
  • 200 grams corn
  • 1 small jar olives
  • 1 heaping teaspoon sweet paprika powder
  • 1 heaping teaspoon dried oregano
  • 1 heaping teaspoon turmeric
  • 1 heaping teaspoon cumin
  • 1 lemon
  • Salt & pepper
  • Olive oil
  • Parsley & feta cheese for garnish

Required kitchen gadgets, helper & preparations:

  • Water heater
  • Large bowl for salad
  • Lemon juicer

Instructions:

Put 250 grams of instant couscous and 1 teaspoon of salt in a suitable salad bowl. Bring 400 milliliters of water to the boil in a kettle or on the stove & pour over the couscous. Mix everything together well & then cover and leave to swell for 4 – 5 minutes.

Meanwhile, halve or quarter the tomatoes, depending on their size. Remove the wilted green from the spring onions and cut into fine rolls. Cut the cucumber into small cubes. Afterwards season the swollen couscous with 1 heaping teaspoon each of turmeric, sweet paprika powder, cumin and oregano, then stir in all the spices well.




Next, add the prepared vegetables, 200 grams of corn and the olives to the couscous, as well as the juice of one lemon and a good dash of olive oil. Stir the salad well so that all the ingredients can be evenly distributed, season with salt & pepper to taste & then we are ready to dish up.

Place the done couscous salad on deep plates, crumble some feta cheese over the salad, sprinkle with finely chopped parsley & serve. Have fun cooking!
