Cheeseburgers are absolute soul food and a classic in every fast food or burger restaurant. In today’s post I’ll show you a stuffed cheeseburger variant, namely a bread roll bun stuffed with ground meat, cheese and pickles.

For the filled cheeseburger buns, the ground meat is not formed/shaped into patties, but simply seasoned & “wrapped” together with cheddar & pickles in a bread roll yeast dough & then baked in the oven. Have fun cooking/baking!

Ingredients for 8 Stuffed Cheeseburger Bread Rolls:

…for bread roll yeast dough:

  • 500 grams wheat flour
  • 300 milliliters water
  • ½ cube fresh yeast (about 20 grams)
  • 1 teaspoon salt
  • 1 teaspoon sugar

…for filling & toppings:

  • 400 grams ground meat (half beef & half pork)
  • 8 slices cheddar cheese (or other type of cheese)
  • 1 small onion
  • 1 heaping tablespoon mustard
  • 2 – 3 tablespoon ketchup
  • Salt & pepper
  • 2 – 3 pickles
  • 1 egg for brushing
  • Sesame seeds for garnish

Required kitchen gadgets, helper & preparations:

  • Mixing bowl
  • Kitchen machine or mixer with dough hooks
  • Knife or dough card
  • Rolling pin
  • Baking sheet + baking paper
  • Kitchen towel
  • Brush

Instructions:

Slice the pickles & set aside. Peel and finely chop a small onion. Put the finely chopped onion together with 400 grams of minced meat, 1 heaped tablespoon of mustard, a good dash of ketchup & a good pinch of salt and pepper in a mixing bowl & mix everything together well, then set aside.

For the bread roll dough, put 500 grams of wheat flour, 300 milliliters of lukewarm water & 1 teaspoon each of salt and sugar in a mixing bowl, crumble in ½ cube of yeast (about 20 grams) & knead all the ingredients with a food processor or mixer with dough hook for 4 – 5 minutes to form a smooth dough.




Then use a knife or a dough card to divide the dough into 8 pieces of roughly the same size, then form all pieces of dough into small balls or round them under your palms. Roll out the dough balls one after the other on a lightly floured work surface with a rolling pin, circular & about 20cm wide.

For the filling, first put a slice of cheddar in the middle of the flatbread, then spread a few pickle slices on top & finally add a well-heaped tablespoon of the meat mixture on top.

Fold the dough tightly over the filling from all sides, press down a little in the middle & place the filled buns upside down on a baking tray lined with baking paper, repeat the whole thing for the remaining ingredients.

Cover the filled bread rolls with a kitchen towel & let them rest for 30 – 45 minutes until the rolls have increased in volume. Preheat the oven to 200°C (top/bottom heat) in good time. After the resting time, brush the buns with some beaten egg & sprinkle with sesame seeds (white & black sesame seeds were used here).

Then put the filled cheeseburger buns in the preheated oven & bake for 20 – 25 minutes until golden brown. Take the done bread rolls out of the oven & serve them together with a good portion of ketchup. Happy baking!
