A sandwich is the ideal snack for anyone who doesn’t want to spend long in the kitchen. Two slices of bread, lettuce, tomatoes & a mixture of eggs, pickles & creme fraiche, that’s all you need for a delicious egg salad sandwich.

Once the eggs are cooked it takes only 10 minutes max & you have a sandwich in your hands that probably won’t be the last of yours! Prepared super quickly and soooooo delicious! Have fun cooking!

Egg Salad Sandwiches with Tomatoes & Salad

Ingredients for 4 servings:

  • 8 slices bread or toast bread
  • 4 large eggs
  • 2 tomatoes
  • 2 – 3 pickles
  • 100 grams mixed salad of your choice (e.g. lamb’s lettuce or rocket)
  • 2 heaping tablespoons creme fraiche
  • ½ tablespoon mustard
  • Salt & pepper
  • Oil for roasting bread
  • Chopped chives for garnish

Required kitchen gadgets, helper & preparations:

  • Mixing bowl for the egg salad cream
  • Small pot for cooking eggs
  • Grill pan, toaster or panini grill to roast the bread

Instructions:

Bring a pot of water to the boil, add the eggs to the boiling water & cook until hard for 8 – 9 minutes, then rinse with cold water & allow to cool. Finely chop the pickles & place in a mixing bowl. Peel the eggs, also chop finely & add to the mixing bowl.

Finally, add 2 heaped tablespoons of crème fraîche, ½ tablespoon of mustard & a good pinch of salt and freshly ground pepper & stir everything together well, then set aside for a moment.




Drizzle the bread with a little oil & then toast in a pan (alternatively panini grill or oven) until golden brown on both sides. Slice tomatoes. Wash and prepare the lettuce. Cut the chives into fine rolls.

Then top the egg salad sandwich, first put lettuce and tomato slices on a slice of toasted bread, next spread 2 heaped tablespoons of the egg salad mixture on top & finally garnish with some chopped chives & then “cover” with the second slice of bread. Bon appetit & have fun cooking!
