“Cabanossi” Rice Stir Fry with Veggies

In today’s post I’ll show you another recipe with rice & of course the whole thing in a very uncomplicated & quick one-pot rice pan variant.

Cabanossi sausages, vegetables & rice cook together with spices in a pan, aromatic & delicious. For this recipe I used parboiled long grain rice with a cooking time of only 12 – 15 minutes, so lunch including preparation and cooking time is on the table in a maximum of 30 minutes. Ingredients for 4 servings:

  • 4 “cabanossi” sausages
  • 250 grams parboiled rice (cooking time 12 – 15 minutes)
  • 600 milliliters water
  • 3 bell peppers
  • 1 large zucchini
  • 1 large onion
  • 2 – 3 cloves garlic
  • 1 can chopped tomatoes
  • 2 heaping teaspoon Italian herbs
  • 2 teaspoons salt
  • 1 heaping teaspoon sweet paprika powder
  • Oil for frying
  • Parsley for garnish

Required kitchen gadgets, helper & preparations:

  • Large pan or pot

Instructions:

Peel and finely chop a large onion and 2 – 3 cloves of garlic. Wash, deseed and cut the peppers into bite-sized pieces. Quarter the zucchini lengthways & cut into pieces that are not too thin. Cut the cabanossi sausages into slices.

Heat up a large pan with a good dash of oil, add onions & garlic to the pan & sweat for 2 – 3 minutes over medium heat, turning occasionally.

Then stir in 250 grams of parboiled long grain rice as well as 2 heaping teaspoons of Italian herbs and 1 heaping teaspoon of sweet paprika powder and roast briefly. When that’s done, add the prepared vegetables and the cabanossi sausage slices, 1 can of chopped tomatoes, 600 milliliters of water and 2 teaspoons of salt to the pan.




Mix all the ingredients together well, bring the rice pan to the boil & simmer slowly over medium heat for 12 – 15 minutes, stirring from time to time. As soon as the rice is cooked and almost all of the liquid has been absorbed, remove the pan from the heat and dish up.

Place the cabanossi rice pan with peppers and zucchini on deep plates, garnish with finely chopped parsley and serve. Have fun cooking!
