Sooo my dears, I’m finally back from vacation, we were in Sweden for 2 weeks 🇸🇪 & enjoyed the peace and quiet there. As always, I brought a couple of packs of round crispbread. You can buy it in every supermarket and is ideal as a basis for a quick crispbread pizza.

This recipe fits perfectly into the topic of using leftovers, everything that is still in the fridge can in principle be used as topping for this crispbread pizza. For me it was paprika, corn & salami or cabanossi, all products that I still had left in the fridge. Cut into small pieces, place on the crispbread, sprinkle with cheese & then briefly gratinate in the oven. Have fun cooking!

Ingredients for 1 sheet crispbread pizza:

  • 1 pack crispbread (here round Swedish crispbread)
  • 200 grams grated cheese
  • 200 milliliters tomato passata
  • 100 grams salami or cabanossi
  • 1 red paprika
  • ½ can corn
  • Italian herb mixture
  • Salt
  • Parsley for garnish

Required kitchen gadgets, helper & preparations:

  • Baking sheet + baking paper

Wash, deseed and cut the peppers into strips. Cut the salami or cabanossi into slices. Finely chop the parsley for the garnish. Place the crispbread on a baking sheet lined with baking paper, first spread with the tomato passata & season with salt & Italian herbs.

Tip: If you don’t get large, round crispbread, you can just as well line the baking tray with slices of crispbread or you can bake small mini pizzas out of them.

Next, spread the remaining ingredients on the crispbread pizza, pepper strips, corn, grated cheese & salami/cabanossi & then bake the pizza at 200°C (top/bottom heat) for about 10 minutes until the cheese has melted.

Take the finished crispbread pizza out of the oven, garnish with chopped parsley & cut into pieces. Enjoy your meal!
