Last week I presented you a delicious pasta recipe with pumpkin sauce, and since I just really love pumpkin, I have prepared another quick recipe with pumpkin for you today.

In today’s post I’ll show you a vegetarian recipe for pumpkin potato curry with leaf spinach, without a lot of “bells and whistles”, the veggie curry is on the table within 25 minutes & fits perfectly into the autumn time thanks to the seasonal ingredients. Have fun cooking!

Simple Pumpkin Potato Curry with Spinach

Ingredients for 4 servings:

  • 750 grams pumpkin (for example hokkaido or butternut)
  • 750 grams potatoes (primarily waxy here)
  • 750 milliliters of tomato passata
  • 150 grams fresh spinach leaves
  • 1 large onion
  • 1 – 2 cloves of garlic
  • 1 heaping teaspoon each of curry & sweet paprika powder
  • 1 can of coconut milk
  • Salt & pepper
  • Oil for frying

Required kitchen gadgets, helper & preparations:

  • Large pot, pan or wok for curry

Peel and finely chop the onion & garlic. Deseed the pumpkin and cut into small pieces or cubes. Peel the potatoes & also cut into small pieces or cubes. Wash the spinach leaves, pat dry & set aside.

Now heat up a pot or pan with a good dash of oil, sweat onions & garlic over low to medium heat for 2 – 3 minutes, turning occasionally. Then add the pumpkin & potato pieces, also add 1 heaping teaspoon each of curry powder & sweet paprika and season with a good pinch of salt & pepper.

Mix everything together well, then pour in the coconut milk and tomato passata, as well as a dash of water (if neccessary) so that the pumpkin and potatoes are completely covered with liquid.




Bring the contents of the pan to a boil & then simmer over low to medium heat for about 10 – 12 minutes, stirring occasionally, until potatoes & pumpkin are tender, stirring occasionally from time to time.

Finally, add the prepared spinach leaves to the curry, heat everything again briefly on the stove until the spinach leaves have broken down, season again with salt & pepper if necessary & then serve immediately. Have fun cooking!
