The Christmas season is getting closer and closer, and various cookies and Christmas sweets have been available to buy in the supermarkets for weeks. That’s why my first Christmas preparations are slowly starting and baking cookies is definitely part of it. Last week I introduced you to these wonderful ring shaped butter cookies with jam.
In today’s post I’ll show you a cookie recipe that doesn’t require the oven. This time the cookies are not baked in the oven, but in a waffle iron. Today I’m going to show you a recipe for super delicious & crispy waffle cookies decorated with dark chocolate and colorful sugar sprinkles. So so delicious, you definitely have to try it. Cooked/Baked today: Baking Waffle Cookies with Chocolate

Ingredients for about 50 waffle cookies:
- 200 grams flour
- 125 grams soft butter
- 125 grams dark chocolate
- 100 grams sugar
- 1 teaspoon baking powder
- 1 large egg
- 1 sachet vanilla sugar
- A pinch of salt
- Sugar sprinkles for decorating
- Additional oil or butter to grease the waffle iron
Required kitchen gadgets, helper & preparations:
- Mixing bowl
- Mixer
- Waffle iron
- Cooling rack
- Small pot, double boiler or microwave to melt chocolate
- Baking paper to harden the chocolated cookies
Instructions:
…for waffle cookies:
Put soft butter together with 100 grams of sugar, 1 sachet of vanilla sugar & 1 egg in a mixing bowl and beat with a mixer for 1 – 2 minutes until creamy. Next, add 200 grams of flour, 1 teaspoon of baking powder and a pinch of salt to the mixing bowl and mix together until a smooth dough is formed.
Whrn done heat up a waffle iron (I used level 3 of 4 here) & grease with butter or oil if necessary. As soon as the waffle iron has heated up, give the dough into the hot waffle iron in portions (4 – 5 small dough portions) with a bit distance from each other and bake for 1 – 2 minutes until golden brown and crispy. Allow the finished waffle cookies to cool on a rack, use up the dough as described and bake about 50 waffle cookies.
At the same time, melt 125 grams of dark chocolate (alternatively whole milk, white chocolate or cake icing) on the stove, over a water bath or in the microwave, dip the finished waffle cookies halfway into the melted chocolate, finally decorate with sugar sprinkles and allow them to harden on baking paper. Then serve the waffle cookies or store them in a cookie container. Have fun baking!
