A few months ago I introduced you to a super delicious recipe for oriental minced meat rolls with feta cheese, a super tasty & quick alternative to frozen pizza baguettes, for example.
In today’s article I’ll show you another quick & easy variant, this time with shrimp & peppers. Prepare the shrimp pepper tomato mixture, cut open the baking rolls, cover with the shrimp mixture and put it in the oven to gratinate. Very easy & super quick to make. Definitely try it out! Ingredients for 8 – 10 shrimp bread rolls:
- 5 – 6 bread rolls for crisping up
- 400 grams shrimp (peeled & deveined)
- 200 grams tomato passata
- 150 grams grated cheese (for example mozzarella cheese)
- 2 small bell peppers (red, yellow or green)
- 1 – 2 cloves garlic
- A heaping tablespoon spicy/hot ajvar
- A heaping teaspoon dried oregano
- Salt & pepper

Instructions:

Preheat the oven in good time to 180°C (fan oven) or 200°C (top/bottom heat). Depending on the size, cut the shrimp once or twice. Wash, deseed and cut the peppers into small cubes. Peel the garlic and chop finely, then put everything in a mixing bowl together with 200 grams of tomato passata, 1 heaped tablespoon of ajvar (spicy) and 1 heaped teaspoon of oregano. Season the shrimp mixture with a very good pinch of salt and pepper and stir everything together well.
Halve 4 – 5 baking rolls in the middle and spread or cover each with 2 – 3 tablespoons of the shrimp pepper mixture, then place them next to each other on a baking tray lined with baking paper. Sprinkle all the rolls with grated cheese and bake in the preheated oven for about 20 minutes until golden brown. Have fun cooking! Bon appetit!
