During the week, when I don’t have much time to cook, I like to use pasta from the refrigerated section. Whether it’s spaetzle, ravioli or tortellini, the pasta is incredibly versatile, for example in a colorful tortellini pan with lots of vegetables that makes you want spring.

In today’s post I’ll show you a quick & very simple recipe for a delicious tortellini pan with carrots, leek & peas. The tortellini pan is seasoned with Italan herbs as well as onion & garlic powder, so delicious. You definitely have to try this. Have fun cooking!

Ingredients for 4 servings:

  • 750 grams of tortellini (from the refrigerated section)
  • 3 – 4 large carrots
  • 2 leeks
  • 200 grams of peas (frozen)
  • 200 milliliters of cream
  • 50 grams of grated Parmesan
  • 1 teaspoon Italian herbs or pizza seasoning
  • ½ teaspoon each of garlic and onion powder
  • Salt & Pepper

  • Large pan or pot

Instructions:

Take 200 grams of peas out of the freezer and set aside to thaw. Peel carrots & cut into slices. Clean the leek and cut into finger-thick slices. Put the carrots and leeks in a large pan, salt generously, pour in 200 milliliters of water (or vegetable broth) and simmer with the lid closed for 4 – 5 minutes over medium heat.

Then add 750 grams of tortellini, 200 milliliters of cream, the thawed peas, 1 teaspoon of Italian herbs & ½ teaspoon each of garlic and onion powder, stir everything well, bring to the boil and simmer for another 3 – 4 minutes until everything is cooked through. Finally, season the sauce with around 50 grams of grated Parmesan as well as salt and pepper. Remove the tortellini pan from the heat and serve. Have fun cooking and enjoy your meal!
