A curry is a dish of South Asian and Southeast Asian cuisine. The base for the curry forms a creamy sauce with different spices such as turmeric, cumin, coriander, chili, garlic or ginger.

In today’s post I will show you a quick & easy curry recipe with boiled eggs & chickpeas in a delicious sauce made from coconut milk & chopped tomatoes. Have fun cooking!

Simple & Easy Egg Curry with Chickpeas

Ingredients for 4 servings:

  • 8 – 10 eggs
  • 2 cans chopped tomatoes
  • 1 can chickpeas
  • 1 can coconut milk
  • 1 large onion
  • 2 – 3 cloves garlic
  • 1 small piece ginger
  • 2 teaspoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon sambal oelek
  • Salt & pepper
  • Oil for frying
  • Fresh cilantro or parsley for ganish
  • Cooked rice for serving

Required kitchen gadgets, helper & preparations:

  • Small pot or saucepan for eggs
  • Large frying pan or wok
  • Colander to drain chickpeas

For the eggs, bring a pot of water to the boil, add the eggs to the boiling water and cook for about 7 minutes, then rinse with cold water and peel them off. Peel the onion and garlic and chop finely. Peel the ginger and chop it finely as well. Drain the chickpeas over a pasta sieve, rinse thoroughly and allow to drain.

Heat a large pan or wok with a good splash of oil, add the onions, garlic and ginger to the pan and sauté over a medium heat for 3 – 4 minutes until translucent, turning occasionally. Next, add 2 teaspoons of curry powder and 1 teaspoon each of sambal oelek, ground coriander and cumin, stir in and allow to roast for a few seconds.

Then stir in the drained chickpeas, peeled eggs, 2 cans of chopped tomatoes & 1 can of coconut milk & bring the curry to the boil, simmer for 8 – 10 minutes over low to medium heat until creamy. Finally, season everything with a good pinch of salt and freshly ground pepper and serve the egg curry together with, for example, rice on deep plates, garnish with some chopped coriander or parsley if you want.
