In addition to moussaka, souvlaki skewers or pastitsio (Greek pasta bake), gyros is probably one of the best-known dishes in Greek cuisine & many Greek restaurants in this country also have gyros (e.g. in metaxa sauce) on the menu.
In today’s post I will show you a quick & easy recipe for a chicken gyros stir-fry with rice, peppers & zucchini. The perfect dish if there is still rice left from the previous day. Have fun cooking!

Ingredients for 4 servings:
- 500 grams chicken breast
- 500 grams rice (cooked)
- 250 milliliters vegetable stock
- 2 bell peppers
- 1 small zucchini
- 1 large onion
- 2 – 3 cloves garlic
- 75 milliliters olive oil
- 3 teaspoons oregano
- A teaspoon each of rosemary, thyme, sweet paprika, spicy paprika, ground coriander & cumin
- Salt & pepper
- Parsley for garnish
- 1 lemon for sprinkling
- Yogurt for serving
Required kitchen gadgets, helper & preparations:
- Mixing bowl
- Large frying pan
- Plate for the gyros
- Spatula
Instructions:
…for chicken gyros:
Cut the chicken breast into strips or bite-sized pieces. Peel onion & cut into strips, also peel 2 – 3 cloves of garlic & chop finely. Core the peppers & cut into bite-size pieces together with the zucchini.
Put everything in a large mixing bowl & season with 3 teaspoons of oregano, 1 teaspoon each of rosemary, thyme, paprika powder (sweet), paprika powder (spicy), cumin & ground coriander & a good pinch of salt & pepper.
Add about 75 milliliters of olive oil and then mix everything well until all the ingredients and spices are evenly distributed.
…for chicken gyros stir-fry:
Heat up a large pan without oil or fat, add the prepared meat in portions to the pan & sear for 6 – 7 minutes on all sides, then lift out of the pan & set aside.
Place the meat pan back on the stove over medium heat, add 500 grams of cooked rice and 250 milliliters of vegetable stock to the pan & bring to a boil, stirring occasionally.
As soon as the rice is hot & almost all of the liquid has absorbed, put the meat back to the pan & stir everything well one last time, warm it up briefly & then pull the pan off the stove.
Spread the chicken gyros stir-fry on deep plates, garnish with a little parsley and serve with a lemon wedge and a dab of yogurt. Have fun cooking!
