Hurray Hurray, autumn is here! The leaves are falling from the trees, it’s getting colder and uncomfortable outside. The ideal time for a one pot pasta recipe with seasonal vegetables.
In today’s post, I’ll show you a one pot pasta with pumpkin, with tagliatelle, red onion & sun-dried tomatoes. As always, just prepare all the ingredients briefly & then put them in the pan & wait until done. Have fun cooking!

Ingredients for 4 servings:
- 500 grams butternut pumpkin
- 500 milliliters water
- 250 grams tagliatelle pasta
- 125 grams sun-dried tomatoes in oil
- 200 milliliters cream
- 50 grams grated Parmesan cheese
- 1 red onion
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt & pepper
- Pumpkin seeds for garnish

- Large pan or pot with lid
Instructions:
…for one pot pasta with pumpkin:
Peel the pumpkin & cut into cubes. Peel the red onion & cut into strips. Drain the sun-dried tomatoes & cut them roughly into strips. Then put on a large pan (or a large saucepan), spread 250 grams of tagliatelle in the pan & add pumpkin, sun-dried tomatoes and onions.
Put 1 teaspoon each of salt, dried thyme & dried rosemary into the pan for seasoning & finally pour in 500 milliliters of water and 200 milliliters of cream. Bring the contents of the pan to a boil & simmer gently with the lid closed on low heat for about 10 – 12 minutes, stirring every now and then.
As soon as the pasta is done, has absorbed almost all of the liquid, season everything with salt, pepper & a little grated Parmesan to taste & then serve garnished with pumpkin seeds (if necessary roast beforehand). Have fun cooking at home!
