In today’s post I’ll show you another recipe with rice & of course the whole thing in a very uncomplicated & quick one-pot rice pan variant.
All in all, if you ignore salt, pepper & water, you only need 4 ingredients for this recipe, namely chicken, a pack of frozen mix vegetables, cream & rice. Combine everything in a pan or pot, cook it & out comes this delicious chicken rice stir fry. Have fun cooking!

Ingredients for 4 servings:
- 750 grams chicken breast
- 500 milliliters water
- 400 grams frozen veggie mix (I used a mixture of carrots, peas & corn here)
- 250 grams parboiled rice (cooking time 12 – 15 minutes)
- 200 milliliters cream
- Salt & pepper
- A bit lemon juice to taste
- Parsley for garnish

- Large pan or pot with lid
Instructions:
…for One Pot Rice Stir Fry:
Cut the chicken breast fillet into bite-sized pieces, then spread them in a large pan or pot. Add 250 grams of parboiled rice & 400 grams of frozen mixed vegetables, also pour in 500 milliliters of water and 200 milliliters of cream & season everything with 1 heaping teaspoon of salt and a good pinch of pepper.
Mix all ingredients well together until all ingredients are evenly distributed, bring the chicken rice pan to a boil & allow to simmer gently with the lid closed over low to medium heat for about 12 – 15 minutes, stirring occasionally.
As soon as the rice is cooked, has absorbed almost all of the liquid, season everything with salt, pepper & a bit lemon juice to taste & then serve garnished with finely chopped parsley. Have fun cooking!
