In today’s post I’ll show you a recipe with gnocchi, mushrooms & zucchini, all combined in a delicious gnocchi bake.

For the gnocchi bake, simply cook the vegetables in a pan, put them along with the other ingredients (gnocchi, creme fraiche & spices) in a suitable baking dish & bake in the oven to gratinate with cheese. The gnocchi veggie bake is simple to cook & tastes delicious. Have fun cooking!

Ingredients for 4 – 6 servings:

  • 750 Gramm Gnocchi (aus dem Kühlregal)
  • 250 Gramm Champignons
  • 1 große Zucchini
  • 1 große Zwiebel
  • 2 – 3 Knoblauchzehen
  • 200 Gramm Creme Fraiche
  • 100 Milliliter Weißwein
  • 1 gehäufter Teelöffel süßes Paprikapulver
  • 150 Gramm geriebener Käse zum Überbacken
  • Salz & Pfeffer
  • Öl zum Anbraten
  • Evtl. Petersilie zum Garnieren

Required kitchen gadgets, helper & preparations:

  • Large frying pan
  • Suitable baking dish

Preheat the oven to 200°C (top/bottom heat) in good time. Clean the mushrooms & cut into slices. Wash zucchini, quarter lengthways & cut into pieces. Peel and chop the onion. Peel garlic & cut into slices.

Heat a large pan with a good dash of oil, add the prepared vegetables (mushrooms, zucchini, onions & garlic) to the pan & fry for 5 – 6 minutes over medium heat, turning occasionally.

Then stir a good pinch of salt & pepper and a heaping teaspoon of sweet paprika into the vegetables & deglaze everything with about 100 milliliters of white wine, then allow the white wine to boil down a little.

Afterwards put 200 grams of creme fraiche & 750 grams of gnocchi in the pan (if necessary, season again with salt & pepper), stir everything well together & bring to a boil, then remove from heat & transfer to a suitable baking dish.

Top the gnocchi bake with 150 grams of grated cheese & then bake for about 25 – 30 minutes in the preheated oven until golden brown and crispy.

Take the done gnocchi bake out of the oven after about 25 – 30 minutes, distribute on plates & serve garnished with a little chopped parsley if necessary. Have fun cooking at home!
