Meat Meat Hooray! Today there is another delicious dish with meatballs & today I will show you a super simple recipe for delicious meatballs with potatoes & creamy sauce from the oven.
The meatballs as well as the potatoes and the sauce are placed in a casserole dish and cooked/baked in the oven, which means that both the sauce and the meatballs taste even more intense. Have fun imitating!

Ingredients for 4 servings:
- 1,25 kilograms floury potatoes
- 750 grams ground meat (half beef/half pork)
- 200 milliliters cream
- 200 milliliters veggie stock
- 75 grams grated Parmesan
- 50 grams breadcrumbs
- 1 large egg
- 1 onion
- 1 – 2 clove(s) garlic
- 1 heaping tablespoon mustard
- 2 – 3 tablespoons tomato ketchup
- 1 heaping teaspoon cornstarch
- A few sprigs of rosemary
- A few sprigs of thyme
- Salt & pepper
- Parsley for garnish
Required kitchen gadgets, helper & preparations:
- Mixing bowl
- Large baking dish
- Tall container for sauce
- Whisk
- Grater
Instructions:
…for oven-baked meatballs with potatoes:
Peel and finely chop the onion. Also peel and finely chop the garlic. Put 750 grams of minced meat together with onions & garlic, 50 grams of breadcrumbs, 1 egg, 1 heaping tablespoon of mustard, 2 – 3 tablespoons of ketchup & a good pinch of salt & pepper in a mixing bowl & knead with your hands until all ingredients are evenly distributed. Set the mincemeat aside for a moment.
Preheat the oven to 220°C (top/bottom heat) in good time. Peel potatoes & cut into small pieces or cubes. Pluck the thyme & rosemary from the stems against the direction in which they grow, then chop finely with a knife. Put the potatoes & herbs in a casserole dish, season with salt & pepper & mix everything together briefly.
Form 8 – 10 balls of the same size from the minced meat mixture & place in the casserole dish with the potatoes. Put 200 milliliters of vegetable stock, 200 milliliters of cream & 1 heaping teaspoon of cornstarch in a tall container & whisk briefly with a whisk, then pour into the casserole dish with the potatoes.
Place the casserole dish in the preheated oven for 30 – 35 minutes, meanwhile finely grate 75 grams of Parmesan for gratinating. After about 30 minutes, take the casserole dish out of the oven, sprinkle the meatballs with Parmesan & put in the oven for another 15 – 20 minutes & bake until the potatoes are done.
Take the done meatballs out of the oven, then place on deep plates along with potatoes & creamy sauce & serve garnished with finely chopped parsley. Have fun cooking!
