The asparagus season is coming to an end in June, but as long as the delicious locally grown vegetables are still available, we’ll serve them. Traditionally with hollandaise sauce & potatoes, but today I use it in a simple gnocchi stir-fry.
In today’s post I’ll show you a simple stir-fry with asparagus, gnocchi & mushrooms in a creamy sauce seasoned with paprika powder. Super creamy, super tasty & super simple to cook. Have fun cooking!

Ingredients for 4servings:
- 800 grams gnocchi (from the refrigerated shelf)
- 500 grams green asparagus (peeled)
- 400 grams brown mushrooms
- 200 milliliters cream
- 100 milliliters white wine
- 1 heaping teaspoon sweet paprika
- Oil for frying
- Salt & pepper
- Chopped parsley for garnish
- Grated Parmesan Cheese for garnish
Required kitchen gadgets, helper & preparations:
- Vegetable peeler
- Large pan or pot
Instructions:
…for gnocchi stir-fry with asparagus & mushrooms:
Wash the asparagus, peel off the lower third with a vegetable peeler & cut off the woody ends, then cut the asparagus into pieces. Clean mushrooms & cut in halves or quarters depending on their size. Next, heat up a large pan with a good dash of oil, add mushrooms & asparagus to the pan & sauté for 3 – 4 minutes over medium-high heat.
Then sprinkle 1 heaping teaspoon of sweet paprika powder over the vegetables and season with a good pinch of salt and pepper. Deglaze the veggies with a good dash of white wine & allow the white wine to boil down almost completely. Finally, add 200 milliliters of cream and stir in the gnocchi.
Let everything simmer for a further 2 – 3 minutes over low to medium heat, turning occasionally, until everything has reached a creamy consistency, if necessary season again with salt & pepper to taste. Spread the asparagus mushroom gnocchi pan on deep plates & serve garnished with chopped parsley and grated Parmesan cheese. Have fun cooking!
