…for chicken gyros stir-fry with cabbage:
Cut the chicken breast fillets into strips or bite-sized pieces. Peel onion & cut into strips, also peel 2 – 3 cloves of garlic & chop finely.
Put the meat, onions & garlic in a large mixing bowl & season with 2 heaped teaspoons of oregano, 1 teaspoon each of thyme, sweet paprika powder, spicy paprika powder, cumin & ground coriander & as well as a good pinch of salt & pepper.
Then add a good dash of rapeseed, sunflower or olive oil and mix everything together well until all the ingredients and the spices are evenly distributed.
When that’s done, heat a large pan without oil or fat, add the meat in portions to the pan & sear on all sides for 4 – 5 minutes, then lift out of the pan & set aside. Meanwhile, cut the cabbage into thin strips.
Place the meat pan back on the stove over medium heat, add the cabbage strips to the pan, season with a good pinch of salt & pepper & sweat, turning occasionally, until the cabbage starts to lose water.
Finally, put 200 grams of crème fraiche and the meat back into the pan, stir everything well one last time and heat through briefly. Then remove from the stove and serve.
French fries or cooked pasta, for example, are suitable as a side dish. Finally, garnish the gyros cabbage pan with crumbled feta cheese and chopped parsley & serve with a few lemon wedges. Have fun cooking!
