The possibilities for a one pot pasta are almost endless, today I’m going to show you a summer variant with lemons, chicken & peas. A wonderfully delicious pasta that, as always, is on the table within a few minutes.
I chose spaghetti for this one pot pasta, but as always, all other types of pasta (e.g. penne or fusilli) are working as well for this recipe. Have fun cooking!

Ingredients for 4 – 6 servings:
- 500 grams spaghetti pasta (or any other pasta shape of your choice)
- 1 liter water
- 500 grams chicken breast
- 200 grams frozen peas
- 200 milliliters cream
- 1 large onions
- 2 – 3 cloves garlic
- 3 – 4 sprigs of thyme
- 3 – 4 sprigs of rosemary
- 2 handfuls of grated Parmesan
- 2 untreated organic lemons
- Salt & pepper
- Oil for frying

- Large pan or pot with lid
- Fine grater for lemons
Instructions:

Take out of the freezer 200 grams of peas and let them thaw. Peel and finely chop the onion & garlic. Cut 1 lemon into slices about 1 centimeter thick & remove any seeds. Cut the chicken breast into strips or cubes.
Next, heat up a large pan with a dash of oil, add the chicken strips to the hot pan & sear over medium to high heat for 3 – 4 minutes, turn once & then lift out of the pan & set aside.
Then add another dash of oil to the pan, add the onions & garlic to the pan & sweat for 2 – 3 minutes over medium heat, turning occasionally.
Next add 500 grams of spaghetti (alternatively another type of pasta), the lemon slices, 3 – 4 sprigs each of thyme and rosemary, 1 liter of water & 1 heaped teaspoon of salt to the pan, then stir everything well, bring to the boil & simmer gently with the lid closed over low to medium heat for about 10 minutes.
Stir the one pot pasta from time to time so that all the ingredients can be evenly distributed and nothing can burn on the bottom of the pan. As soon as the noodles are cooked and almost all of the liquid has been absorbed, return the chicken to the pan, stir in the peas as well as 200 milliliters of cream and 2 handfuls of grated Parmesan and simmer until creamy, stirring occasionally.
Take the herb sprigs and lemon slices out of the pan and discard. Finally, season the one pot pasta with sal, pepper & some lemon zest to taste, then remove from heat & serve immediately. Have fun cooking!
