Carrot feta patties are a wonderful vegetarian alternative to classic meatballs. The carrots are grated, mixed with feta cheese,, eggs, oats & spices, then formed into small patties & fried in oil.

Ingredients for 8 – 10 patties:

…for herbed quark dip:

  • 250 grams quark
  • 3 – 4 tablespoons yogurt
  • A small bunch of chives & parsley
  • Salt & pepper
  • Oil & white wine vinegar to taste

…for patties:

  • 500 grams carrots
  • 200 grams feta cheese
  • 100 grams of tender rolled oats
  • 2 large eggs
  • 1 small onion
  • 1 – 2 cloves garlic
  • ½ teaspoon geräsmoked paprika powder
  • Salt & pepper
  • Oil for frying

Required kitchen gadgets, helper & preparations:

  • Small bowl for quark dip
  • Peeler
  • Mixing bowl
  • Grater
  • Frying pan
  • Kitchen paper

Instructions:

For the herb quark, wash the chives and parsley, then finely chop or cut into fine rolls. Put the chopped herbs together with 250 grams of quark, 3 – 4 tablespoons of yoghurt, a dash of oil& white wine vinegar as well as a good pinch of salt and pepper in a small bowl and stir together, then set aside until ready to serve.

For the carrot feta patties, peel 500 grams of carrots & grate finely with a grater, then put the grated carrots in a mixing bowl. Peel and finely chop the onion and garlic cloves, then add both to the carrots in the mixing bowl.

Finally, put 2 large eggs, 100 grams of tender rolled oats & 200 grams of crumbled feta cheese into the mixing bowl & season everything with a very good pinch of salt & pepper and ½ teaspoon of smoked paprika powder. Mix all ingredients well together until all ingredients are evenly distributed & then form 8 – 10 patties with your hands.

Tip: Squeeze the patties together well so they don’t fall apart while frying in the pan. Use plenty of oil when frying, the bottom of the pan should be well covered with oil & don’t turn the patties too quickly.

Heat up a large pan with plenty of oil & gradually fry the patties over medium to high heat for 4 – 5 minutes per side until golden brown, turning once carefully. Lift the finished patties out of the pan & drain on kitchen paper. Dish up the patties together with herbed quark (alternatively, you can also serve them with a garlic dip) on plates & serve.
